Lavender Shortbread Cookies

Try this recipe for lavender shortbread cookies. It adds a subtle but distinctive taste and aroma to a tried and true favorite.

Lavender Shortbread Cookies

Ingredients

• 1½ tsp dried lavender buds

• ½ cup (118 ml) butter (1 stick)

• ½ cup (118 ml) sugar

• 1 cup (236 ml) flour

• 1 egg yolk

• 1 tsp vanilla

• ¼ tsp salt

Mixing

Soften the butter slightly in microwave oven if needed.

Combine lavender and sugar with the butter until it is mixed well.

Add the vanilla and egg yolk and continue mixing.

Add the salt and flour to the mixture.

Continue mixing until it begins to firm.

With your hands, shape the dough into a log shaped roll. This is best done on a floured surface.

Your log should be about 1½ inches (38mm) in diameter.

Wrap the log in plastic wrap and place in the refrigerator for at least 1 hour. Overnight is fine.

Baking

Preheat oven to 350ºF (177ºC).

Remove the log from the refrigerator and slice into cookies that are about ½ inch (13mm) thick.

Place cookies onto an ungreased cookie sheet.

Bake in oven for 10-12 minutes.

Remove from oven and allow to cool some before removing from cookie sheet.

Makes about 2 dozen cookies.
